Traditional First Nations Bannock Recipe: Easy Homemade Fried Bread

Learn to make authentic First Nations Bannock with this easy-to-follow recipe. Perfect for home baking, camping over an open fire, or pan-frying, this traditional Native American bread can be enjoyed plain or with sweet additions like raisins or blueberries.

Ingredients

  • 2 cups white flour
  • 1 Tbsp. baking powder
  • 1 cup shortening (lard)
  • 1 cup cold water
  • 1 cup raisins or blueberries ( Be creative with your additions or have it plain) add these last.

Method

For Home Preparation:

  1. Preheat oven at 375-400 F
  2. Grease an 8"X9"pan
  3. Mix all ingredients together (except the special additions you’ve chosen) to resemble coarse meal. 4) Then add the cold water and stir.
  4. Now, add the 1 cup of special additions you’ve chosen. Stir until it forms a dough. Roll dough. 6)Place the dough in the pan and bake for 20 mins. or until the top is golden brown.

For Camping: The bannock can be cooked over an open fire. Follow the recipe above but you will use no pan. When it forms the dough proceed as below.

  1. Divide the dough into 4 portions and wrap each portion around a long stick.(Found in the woods)
  2. Place by an open fire and cook until it is a golden brown.Eat it right off the stick!

If you using a frying pan at home or camping:

  1. Grease and heat frying pan
  2. Form dough into 1/2" thick pan cakes and dust each lightly with flour.
  3. Place cakes into warm frying pan and cook until bottom side has a crust then cake will hold together when flipped.
  4. Flip cakes and continue to cook until a toothpick (sm. stick) is inserted in the cake comes out clean.

To make “Bannock Tart”:

  1. Make the cakes same as above but make them 1/4" thick,place fresh berries,jelly,or jam on the cakes and fold it over before cooking. Cook the same as above.

All of the above styles of cooking the bannock are fun! You can also eat them plain or with butter/marg. or jam.
