Rice Cooker Kheer

Description

Kheer is basically the Indian version of rice pudding. If you love the taste of kheer, but don't want to stand over a stove stirring for 20 minutes, AND you have a rice cooker with a "porridge" setting, give this a try!

Ingredients

  • 1/2 cup white rice
  • 5 cups milk
  • 2/3 cup white sugar
  • 2 tablespoons chopped nuts (almonds, pistachios, cashews)
  • 1 teaspoon cardamom powder

Method

  1. Rinse out the rice.
  2. Combine 4 cups of milk plus the other ingredients into the rice cooker.
  3. Set the cooker to “porridge”, 1 hour if given the choice.
  4. Once the cooker is done, let the pudding cool.
  5. Stir in the remaining milk, then refrigerate covered.

I like my kheer cold, but you might prefer it just lightly chilled, in which case, take it out of the fridge to warm up before serving. Feel free to customize the amount of milk you add at the end, so you reach your prefered consistency.

Note: I use 2% milk and standard long grain rice.
