Jip Way Chow Mein: Crispy Cantonese Noodles with Savory Sauce

Recreate the famous 'House Special' Jip Way Chow Mein from Lin Heung Restaurant in Victoria, BC, with this authentic copycat recipe. Enjoy perfectly crispy pan-baked noodles topped with a rich Cantonese-style sauce, generously loaded with squid florets, shiitake mushrooms, and fresh vegetables. A satisfying and flavorful homemade Chinese noodle dish.

Ingredients

  • SAUCE
  • 1/2 cup olive oil
  • 1 thumb of grated ginger
  • 2 Tbsp soy sauce
  • 1 cup chicken stock
  • 1 Tbsp sesame oil
  • 1 cup squid florets (~16)
  • 8 dried shitakes
  • 2 lb Bok Choy (6)
  • 1 cup broccoli
  • 4 Tbsp oyster sauce
  • 1 Tbsp cornstarch dissolved in 2 oz water
  • 1 Tbsp oil
  • 1 lb fresh chow mein
  • 2 green onions, cut in 1" strips

Method

Boil noodles for 5 minutes, drain. toss in 1 Tbsp oil and arrange on baking sheet in a birds nest. bake at 400 for 7-8mins, turn, bake 7-8mins until outer edges are crispy and browned.

While noodles are baking, in a wok or deep skillet add the sauce ingredients one at a time, cooking over high heat. Finish by adding cornstarch mixture to thicken and remove from heat.

Serve noodles, topped with sauce and green onions Suggestion: also top with sliced char siu pork
