Learn how to make delicious homemade All-Bran Buttermilk Rusks, a traditional South African baked good known for its crunchy texture. Perfect for dipping in coffee or tea, these rusks are an ideal breakfast treat or snack.

Ingredients

  • 182 gram All-Bran Cereal (I put this in a plastic bag and crush it until fine)
  • 1 kg Self-Raising Flour
  • 1 teaspoon Salt
  • 3 Eggs
  • 2 cups Sugar
  • 500 grams Buttermilk
  • 500 grams Butter

Method

Preheat the oven to 180°C Mix the All-Bran, Self-Raising Flour and Salt in a large container Melt and heat the butter in the microwave Beat the eggs and add the sugar and buttermilk Lastly add the heated butter Mix the butter/egg mixture to the flour mixture and mix well - work fast Ladle in a greased, large oven pan (330 x 280 mm) and flatten the mixture to remove air bubbles Cut into fingers Bake for 45 minutes in an oven of 180°C or brown Let it cool completely before cutting and placing it on a drying rack Dry in oven at 200°F for ±3 hours until the rusks are dry, crunchy and brittle. (I place a wooden spoon in the door of the oven)
