Fresh Nutritional Yeast Dressing

Preparation time: 5 minutes Easy - for beginners

Description

This is a delicious, fresh and nutritious salad dressing. It's so good, it triggers cravings and can be addicting...and in this instance that's good! I first tasted a similar version of it at a restaurant called Gypsy Cab Company...their house dressing.

Ingredients

  • (Some of these ingredients can be found at Whole Foods or a health food store.)
  • 1/3 c. low sodium tamari (especially important that tamari is low sodium, it is richer)
  • 1/4 c. apple cider vinegar
  • 2 T. fresh squeezed lemon juice
  • 2/3 c. expeller-pressed safflower oil
  • (or substitute your favorite salad oil)
  • 1/2 c. water
  • 2 T. tahini (Middle Eastern sesame paste)
  • 2 large garlic cloves
  • 1 1/4 c. nutritional yeast
  • 3 pinches of salt
  • 2 tsp. sesame oil

Method

Mix in a blender and pour into 2 bottles. Makes 20 oz. The dressing should be golden in color and a creamy consistency. Refrigerate and shelf life should be 1 week. This dressing is absolutely delicious! It tastes rich and cheesy. Serve on salads or pasta or dip bread or vegies. It is very nutritious, rich in B vitamins.
