Vegan Scrapple

Description

Scrapple is a favorite among German people in NJ and PA, but nt for vegans. This recipe gives German vegans a solution to the dilemma.

Ingredients

  • 1/2 cup finely chopped onion
  • 1/3 cup finely chopped carrot
  • 1/4 cup finely chopped green pepper
  • 3 1/2 cups boiling water
  • 1 1/4 cups yellow corn meal
  • 1 tablespoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons finely chopped pimento
  • 1 cup coarsely chopped peanuts

Method

Lightly ‘grease’ a 9 1/2 x 5 1/4 x 2 3/4 inch (24 x 14 x 7 cm) loaf pan. Prepare onion, carrot and green pepper and set aside.

Pour hot water into top of double boiler, and slowly add corn meal, salt and pepper, stirring constantly. Cook over direct heat until thickened, stirring constantly. Add the chopped veg and pimento.

Meanwhile, chop the peanuts coarsely and stir into the cooked corn-meal mixture. Pour into the pan, spreading to the edges. Chill in refrigerator about 4 hours.

Remove from refrigerator and cut into 1 inch / 2.5 cm thick slices. Heat 2 tablespoons oil in skillet, brown slices on both sides.

Serve warm with maple syrup or apple butter.
