Ukrainian Nalysnyky with Dill

Description

Nalysnyky is Ukrainian for crepes. I make this every January for either Ukrainian Christmas or New Years. It goes over really well. 418 calories per serving 240 mg cholesterol 26.4g protein

Ingredients

  • 2 eggs, well beaten
  • 1 1/2 cups milk
  • 1 tbsp sugar
  • 1/4 tsp vanilla
  • 1 1/4 cups all-purpose white flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp oil
  • Cheese filling:
  • 2 cups cream style cottage cheese
  • 2 eggs well beaten
  • 1/4 tsp salt
  • 1 tbsp sugar
  • 1 tbsp chopped dill
  • Sweet cream (I use half and half sweetened with sugar)

Method

Preheat oven to 300*F

  1. To make the batter, mix eggs, milk and 1 tbsp sugar together

  2. Add vanilla extract and oil

  3. Sift flour, baking powder, and salt together and add to milk mixture, stirring until smooth

  4. Using a greased frying pan, fry the batter into thin crepes.

  5. Set crepes aside and seperate between waxed papaer.

To make filling:

  1. Mix cottage cheese, eggs, salt, 1 tbsp sugar and dill

  2. Spread over each crepe about 1-2 tbsp (depends on how big your Nalysnyky are) and roll up

  3. Arrange Nalysnyky into a well buttered casserole dish, cover with foil.

  4. Drizzle each Nalysnyky with sweet cream

  5. Bake at 300*F for 35 minutes. Uncover towards to end so thy can brown a little.
