Traditional Chinese New Year Red Bean Glutinous Rice Cake (Leen Goh / Nian Gao)

Description

Celebrate the Chinese New Year with this traditional red bean glutinous rice cake, also known as Leen Goh or Nian Gao. This delightful and light-flavored dessert can be easily prepared by baking or steaming, offering a sweet and chewy treat for festive occasions.

Ingredients

  • 3/4 cup of sugar
  • 2 cups of milk*
  • 3 eggs
  • 1 cup of cooking oil
  • 1 bag of (400 g) Sweet Rice flour (Glutinous rice flour)
  • 1/2 cup red bean paste or 1 cup of coconut milk
  • *If using coconut milk, only use 1 cup of regular milk

Method

Preheat oven to 300’F. Grease a 9"x12" glass dish. If using a metal pan, use parchment paper to line it as the cake is very sticky.

Put milk, sugar, eggs and cooking oil in a large bowl and mix well with a mixer on medium speed for 1/2 minute.

Add red bean paste and mix till smooth.

Slowly sift in glutinous rice flour and mix at a low speed till all combined. Pour into greased dish.

Bake for 45 min. Cut into squares after cooled.
