This is my favourite creamy pasta dish!
Melt butter in a large frying pan, add the bacon & cook over medium heat for 5mins or until crisp.
Add garlic & leek and cook for 2mins, then add the mushrooms and cook for 8mins, or until softened.
Add the wine, cream & thyme, bring to the boil, then reduce the heat & simmer for 10mins, or until the sauce has thickened.
Meanwhile, cook the tortellini in a large saucepan of lightly salted boiling water until al dente. Drain.
Add the parmesan to the sauce & stir over low heat until melted. Season. Combine the sauce with the tortellini & parsley.
