The TCB Sandwich

Description

This is one of my all time favourite sandwiches. I would love to say it was inspired by Elvis, but I'm not real keen on deep frying. It wasn't even inspired by the Guess Who. It's just tomato, caciocavallo and basil.

Ingredients

  • french bagutte or ciabatta (only you know what size it must be…)
  • nice ripe tomatoes (cherries are about the only ones we get in that are worth using if you make this in winter)
  • caciocavallo cheese (this is smoked mozza. You could also use boconcini or mozza, but I like the smokey flavour.)
  • fresh basil leaves
  • mayo
  • s& fresh ground pepper

Method

i like to slice the tomatoes thinly, but that’s just my preference. Sometimes I marinate them in a little olive oil and balsamic vinegar with some thin sliced onion. A slice of bacon or two and you have the mother of un-BLTs. No instructions here, just make sure you get some s&p on those tomatoes. If you don’t know how to make a sandwich you should probably keep away from knives altogether anyway.
