Sweet, Sour & Spicy Ambarella Curry (Sri Lankan Recipe)

Ingredients

  • 3 Ambarella fruits
  • 1 tsp roasted curry powder
  • 1 tsp chilli powder
  • ¼ tsp turmeric
  • 2 red onions
  • 2 cloves crushed garlic
  • ½ inch piece of crushed ginger
  • 1 sprig curry leaves
  • 1 tsp brown sugar
  • 1 cup coconut milk
  • 1 cup water

Method

Peel and chop the ambarella and set aside. In a shallow pan add a tablespoon of oil and fry the onions, curry powder, garlic, ginger, turmeric, chilli powder and curry powder over medium heat for 1 minute. Tip in the chopped ambarella and pour the water until covered. Cook for ten minutes and add the coconut milk and salt, simmer on low fire. Add the sugar last and stir well.
