Discover how to make a delicious and unique Ambarella Curry, a traditional Sri Lankan dish known for its distinctive sweet, sour, spicy, and hot flavor profile. This aromatic fruit curry is perfect as a 'rice puller' with any meal, or served with bread, roti, or parata.
Peel and chop the ambarella and set aside. In a shallow pan add a tablespoon of oil and fry the onions, curry powder, garlic, ginger, turmeric, chilli powder and curry powder over medium heat for 1 minute. Tip in the chopped ambarella and pour the water until covered. Cook for ten minutes and add the coconut milk and salt, simmer on low fire. Add the sugar last and stir well.
