Susan’s Meatloaf

Preparation time: 20 min Cooking time: 1 hr Easy - for beginners

Description

Ingredients

  • 2 lb ground beef chuck
  • 2 large eggs
  • 2 cups FRESH bread crumbs (put 4 slices of bread in a bowl and soak in water. Squeeze out the water and tear up the bread into small pieces.)
  • 1 medium onion, finely chopped
  • 1/4 cup green pepper, chopped
  • 1/4 cup ketchup
  • 1/4 cup milk
  • 2 Tablespoons bottled white horseradish (the real thing; not sauce!)
  • 1 1/2 tsp salt
  • 1 tsp dry mustard

Method

Mix all ingredients together and squeeze into a tight loaf. Place in a 9 x 5 bread pan and press in firmly. Frost the top with a thick (appx 3/4 cup) layer of ketchup. Bake at 400 degrees for 1 hour. Let sit for 10 minutes before slicing.
