Stuffed Green Pepper Soup

Description

The Mason Jar restaurant, in Colorado Springs serves the best Stuffed Green Pepper Soup. After tasting the delicious soup I asked if I could get the recipe. The waitress had copies of the recipe tucked away in her apron and was happy to share it.

Ingredients

  • 2 pounds ground beef
  • 1 (14.5-ounce) can tomato sauce
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1/2 cup uncooked white rice
  • 1 cup chopped green bell peppers
  • 2 tablespoons brown sugar
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon minced garlic
  • 2 cups water
  • 2 teaspoons Better Than Bouillon beef base,* or another brand
  • 6 cups water

Method

In large Dutch oven, brown beef and drain. Add tomato sauce, tomatoes, rice, peppers, sugar, salt, black pepper, garlic and 2 cups water. Bring to a boil, stir in beef base. Reduce heat to low, cover and simmer 30-40 minutes or until peppers are tender. Add 6 cups of water and bring back to a boil.

Ladle into bowls and serve.
