Spicy Leftover Turkey Fajitas: Quick & Healthy Post-Holiday Meal

Description

Transform your holiday turkey leftovers into a vibrant and healthy meal with this easy recipe for spicy turkey fajitas. Packed with colorful bell peppers, flavorful seasonings, and zesty lime, these quick stir-fried fajitas are a delicious way to enjoy post-feast turkey, wrapped in your favorite warm tortillas.

Ingredients

  • 3 tablespoons olive oil
  • 1 small red onion, thinly sliced
  • 3 mini sweet bell peppers (red, yellow, orange) - cored, seeded, and thinly sliced
  • 2 cloves garlic, minced
  • 1 cup cooked seasoned turkey breast (remove skin), cut into thin strips
  • 1 tbsp ground cumin
  • 1 tbsp chili powder
  • 1 tsp sea salt
  • 1 tbsp cayenne pepper
  • freshly cracked peppercorn medley
  • snipped fresh cilantro
  • 4 oz shredded Colby Jack cheese, Monterey Jack, or Cheddar
  • 1/4 cup fresh sour cream
  • 2 large juicy limes, room temperature
  • 1 ripe Hass avocado, sliced
  • 4 warmed *Mission Tortillas Artisan Ancient Grains (or other variety of choice fajita-sized tortilla)

Method

Heat the oil in large skillet over med.-high heat. Add the onion, peppers, and garlic - cook, stirring, until slightly softened. Add the turkey strips, cumin, chili powder, sea salt, cracked peppercorn medley, and cayenne. Stir-fry about 5 minutes. Squeeze fresh limes over mixture.

Spoon a couple tablespoons of the turkey mixture onto each warmed tortilla. Top with shredded cheese, a couple slices ripe avocado, and a nice dollop of sour cream. Sprinkle with some snipped fresh cilantro.

Serve with your favorite chilled beer, or maybe a pitcher of festive icy margaritas!
