Shepherd’s Pie With Creamed Corn :)

Description

Shepherd's Pie with a special twist. Seaoned ground beef, mashed potatoes, and sweet creamed corn. Perfectly delicious!

Ingredients

  • Ingredients for meat layer:
  • 2 lbs Ground beef or ground sirloin
  • 1 onion (chopped)
  • 2 garlic cloves (minced) Dash or two of thyme
  • Salt and pepper to taste
  • Creamed Corn Layer:
  • 6 ears of corn (removed from silks and cleaned)
  • 2 Tbsp butter
  • 1/2 cup heavy cream
  • Healthy dash of nutmeg
  • Salt and pepper
  • Potato Layer:
  • Mashed potatoes prepared to your preference
  • *I peel and cube about 5 Russet potatoes
  • boil, drain, and mash them. Adding some butter, cream, salt and pepper.
  • Topping: Cheese of choice and freshley sliced chives.

Method

Prepare: In a large skillet, brown ground beef til no longer pink, drain fat. Add onion, garlic, salt and pepper, and thyme. Let simmer til onion is soft. Set pan aside while preparing corn. Fill large stock pot about 3/4 full of water and bring to boil. Add ears of corn and let boil for about ten minutes. Remove corn from water with tongs and set on cutting board to cool. When cooled, remove corn with a knife slicing in a downward motion. In a medium sauce pan, add corn, butter, cream, salt, pepper, and nutmeg. Simmer on medium heat for about five minutes til cream starts to thicken. *Can also sprinkle mixture with a tsp or two of flour and stir to help thicken. In a 9x13 baking dish layer in following order: Cooked ground beef Creamed corn Mashed Potatoes Top with cheese of your choice Bake for 30 minutes at 350 Garnish with 1/2 cup freshly sliced chives Enjoy!
