Slice the chayote squash into strips; no peeling is necessary Peel onion and garlic and thinly slice them Cut up the tomatoes into cubes Slice the jalapeno (discard the seeds) Saute the onion, garlic and jalapeno till fragrant. Add the tomatoes, the squash, the kaffir leaves and sambal oelek Add enough water to just cover the squash Add salt and sugar to your taste Simmer till the squash just slightly soft but still firm Add the coconut milk and cook for 5 minutes
NOTE: You actually can add about anything else like, cut up firm tofu, garbanzo beans, tempeh, shrimp, thinly sliced beef
