salmon cakes - eggless

Easy - for beginners

Description

great version of one of my childhood classics for those allergic to eggs

Ingredients

  • 1/2 cup oil , Your choice for frying
  • 1-14oz can salmon , You may debone, but it isn’t necessary
  • 1/2 cup flour , Your choice
  • 1 whole small lemon , Juice only (or lemon juice)
  • 1/4 cup onion , finely chopped
  • 1-2 handful cilantro leaves (optional) food processed or finely chopped
  • 1 tbsp ground flaxseed , For egg replacement
  • 3 tbsp water , For egg replacement

Method

Cover the bottom 1/4 inch of a frying with oil and heat on a medium setting. Mix together ground flaxseed and water. Sir frequently until homogenous and set aside. Add the rest of the ingredients to a bowl (do not mix yet). Add in flaxseed mixture and mix until just blended. Do not over mix as this will effect the patties' texture. Make patties out the mix, flour and gently place in hot oil. Brown on each side (approx 3-4 minutes) and blot on paper towel. Enjoy!
