This is a beautifully-crafted fresh & easy year-round primavera .. artistically inspired by my psychic senses! ° ˜¾ ° ã¸. — ¸ .ã㘅㰠Bon appetit!

Ingredients

  • [Fresh cut, washed, + packaged vegatables can be found in your grocer’s produce section]
  • You decide how much of each to mix + match below:
  • butternut squash cubes
  • small broccoli crowns
  • small cauliflower crowns
  • zucchini squash (yellow + green)
  • 1/2 medium-size sweet mayan onion, sliced thin
  • 1/3 can organic black beans (I used Trader Joe’s)
  • 2 tsp red pepper flakes
  • 1-2 tsp garlic powder
  • freshly grated nutmeg
  • 1 tbsp golden brown sugar
  • fresh cracked peppercorn medley
  • coarsely-ground Himalayan pink salt
  • 1/4 c (+ more for finishing) freshly grated romano-parmesan cheese
  • 2 tbsp + 2 more tbsp extra virgin olive oil
  • 2 tbsp butter
  • 2 tsp Litehouse freeze-dried cilantro
  • 2 tsp Litehouse freeze-dried parsley flakes
  • 1/4 c Sauvignon Blanc (I used Gallo)
  • 2 handfuls farfalle, or penne rigate dry pasta, cooked al dente
  • 1/2 c reserved hot pasta water

Method

Saute selected mix + match of fresh cut vegetables in butter over med heat in nonstick pan. Don’t move vegetables around more than a couple times as this will achieve a nice caramelization. Add brown sugar, red pepper flakes, garlic powder, salt, cracked peppercorns, nutmeg to taste.

Add a bit of hot pasta water as vegetable mixture reduces to soften. After 15 mins, add 2 tbsp olive oil, black beans, cilantro, parsley. Saute 2 mins, adding more pasta water as needed. Then add sauvignon blanc to pan to loosen up brown bits. This should reduce in a couple mins to a nice rich caramel color sauce mixture. Turn off heat.

Add cooked pasta to saute pan, folding in gently with vegetables. Sprinkle 1/4 c grated cheese, folding gently. Ladle portions onto plates, drizzling olive oil to taste over each mound. Sprinkle more grated cheese to taste.

Finish plate with dusting of more dried parsley flakes.

Serve with your favorite chilled beverage.
