Orzo and Wild Rice Salad (J. Alexander’s style)

Description

Light, refreshing, tasty, beautiful and oh-so-satisfying!

Ingredients

  • 2 cups cooked wild rice
  • 3/4 cup currants
  • 1/2 cup fresh corn, about 1 ear
  • 1/2 cup slivered almonds
  • 1/2 cup Italian parsley, leaves picked and chopped
  • 1/2 cup red pepper, diced
  • 1/2 cup yellow pepper, diced
  • 1 1/4 cups cooked wheat berries, prepared according to package directions
  • 1/2 cup dried cranberries
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh basil, leaves picked and chopped
  • 2 cups cooked orzo, prepared according to package directions
  • 1 cup Champagne vinaigrette
  • For the Champagne Vinaigrette:
  • 1/4 cup champagne vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon minced garlic
  • 1 tablespoon freshly squeezed lemon juice
  • 1/4 teaspoon freshly cracked black pepper
  • 2 tablespoons olive oil

Method

Mix all ingredients in a stainless steel bowl.

Store refrigerated in an air-tight container.
