Easy - for beginners
Description
Light, refreshing, tasty, beautiful and oh-so-satisfying!
Ingredients
- 2 cups cooked wild rice
- 3/4 cup currants
- 1/2 cup fresh corn, about 1 ear
- 1/2 cup slivered almonds
- 1/2 cup Italian parsley, leaves picked and chopped
- 1/2 cup red pepper, diced
- 1/2 cup yellow pepper, diced
- 1 1/4 cups cooked wheat berries, prepared according to package directions
- 1/2 cup dried cranberries
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh basil, leaves picked and chopped
- 2 cups cooked orzo, prepared according to package directions
- 1 cup Champagne vinaigrette
- For the Champagne Vinaigrette:
- 1/4 cup champagne vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon minced garlic
- 1 tablespoon freshly squeezed lemon juice
- 1/4 teaspoon freshly cracked black pepper
- 2 tablespoons olive oil
Method
Mix all ingredients in a stainless steel bowl.
Store refrigerated in an air-tight container.
