New England Rum Pie

creamy and very rich filling in a buttery crunch crust

Ingredients

  • Crust:
  • 18 graham crackers, crushed
  • 1/3 cup sugar
  • 1/4 pound margarine, melted
  • dash of cinnamon
  • Filling:
  • 12 ounces cream cheese
  • 2 eggs
  • 1/2 cup sugar
  • 1 tablespoon rum
  • Topping:
  • 1 cup sour cream
  • 3 tablespoons sugar
  • 1 tablespoon rum

Method

Crust: Combine well and press into 9" pie pan. Set aside

Filling: Mix all ingredients together well until the consistency of whipped cream. Pour into crust and bake at 350 degrees F for 20 minutes

Topping: Mix all together well and spread on baked pie. Bake for an additional 5 minutes at 375 degrees F. Serve chilled.
