Mt Kosciuszko Torte

Chocolate extreme

Ingredients

  • BASE:
  • 8 sandwhich tin + smaller one
  • 4 eggs - separated
  • 4 oz caster sugar
  • 4 oz ground almond
  • 4 oz plain dark chocolate - melted
  • TOPPING:
  • ½ pt thick cream “ whipped to soft peaks
  • 1 tbsp rum or brandy
  • cake crumbs from extra base cake
  • ICING:
  • 4 oz plain dark chocolate - melted
  • 1 tbsp black coffee
  • ¼ oz butter - softened

Method

BASE: Beat egg whites and sugar in steel bowl to soft peaks. Beat egg yolks and fold into whites, followed by almond and then cooled chocolate. Put ¾ of mixture into large pan and the rest in the smaller. Bake at 160 oC until cooked. [Abt 20 min for samller; 35min for larger].

Topping: Stir together Cream rum and crumbs [not too fine]. Pile onto base in shape of a mountain. This represents the stones and snow at the top of the mountain.

ICING: Stir coffee and butter into chocolate, cool slightly then cover the topping roughly so that some mixes through.
