Monterey Seafood Dream

Found it in an issue of the Ladies Home Journal years ago & it has become a favorite!

Ingredients

  • Butter
  • Flour
  • Milk - 2 cups
  • Minced garlic - 2 tablespoons
  • Sliced mushrooms - 3 cups
  • Shrimp - 3/4 pound
  • Sea scallops - 3/4 pound
  • Lobster tail meat from 2 8-oz lobstertails
  • White wine - 1 cup
  • Brandy - 1 tablespoon
  • Diced fresh tomatoes - 3 cups
  • Hot pepper sauce - 1 teaspoon
  • Heavy cream 1/4 cup
  • Fettuccine - 1 pound
  • Salt
  • Pepper

Method

Melt 2 tablespoons of butter in saucepan. Add 2 tablespoons flour & cook, stirring, 1 minute. Whisk in 2 cups milk. Bring to boil, stirring constantly; reduce heat & simmer 10 minutes

Place peeled & deveined shrimp, scallops & lobster meat into separate bowls, & sprinkle with 1/4 teaspoon each salt & pepper.

Heat 3 tablespoons butter in large skillet over high heat. Add shrimp and cook, stirring, 3 minutes. Transfer shrimp to bowl. Add lobster to pan & cook 2 minutes; add to shrimp. Add scallops to pan & cook 4 minutes; transfer to bowl. Add 2 tablespoons minced garlic & 3 cups sliced mushrooms to pan. Cook over medium heat 4 minutes; add to bowl. Increase heat to high; add 1 cup white wine & 1 tablespoon brandy and cook 2 minutes.

Add milk mixture, 3 cups diced fresh tomatoes, 1/2 teaspoon each salt & pepper, 1 teaspoon hot pepper sauce and 1/4 cup heavy cream to pan. Bring to boil; return fish to pan & heat through.

Pour over 1 pound fettuccine, cooked.
