This spicy cajun shrimp is an easy, perfect accompaniment to a relaxing Sunday afternoon with that someone special. Serve w/ a parsleyed hot garlic bread, and your favorite chilled beer or wine. ¤
Cook linguine until just al dente, then drain. Reserve 1 cup pasta water. When pasta is done - toss w/ 1 tbsp butter + 1 tbsp olive oil.
Saute portobello slices in 2 tbsp butter, sprinkle w/ sea salt, until golden brown. Add garlic slivers, let caramelize 1 min.
Add 1 tbsp olive oil to pan. Then sun-dried tomatoes, frozen shrimp, blackened seasoning, pepper, and lemon-pepper. Saute 1 min. Toss in fresh basil.
Continue sauteing until shrimp is no longer frozen. Squeeze limes over shrimp. Add a touch more Cajun’s Choice while saute finishes. (If needed, add a little hot pasta water if sauce becomes too thick.)
Slowly add in heavy cream (or cream cheese), stirring gently, until smooth. Next sprinkle in parmesan. Turn off heat.
Nest the pasta on large rimmed plates, spoon cajun portobello-shrimp sauce over pasta. Garnish with scallions and the remaining 2 tbsp Parmesan. Snip fresh parsley over dish and edges.
Serve w/ parsleyed hot garlic bread.
