Katie Lee’s baked beans

Easy - for beginners

Description

Saw this on the Early Show on CBS, this girl can cook. I like Mark's baked beans, I like the Pampered Chef Tangy Baked Beans but this one is good too. Next time might throw big bellpepper pieces in to cook and take out just for the flavor

Ingredients

  • 3 slices bacon diced (I will use precooked bacon and just put a couple of tsp of vegetable oil cook till foams a little and go from there in recipe)
  • 1 medium onion chopped
  • 1 bay leaf
  • 3 15-ounce cans of pork and beans (recipe called for great northern beans but I was raised on Showtime pork and beans and I like the way they are soft and not chewy/crunchy)
  • 1-1/2 cups of ketchup
  • 1 cup light brown sugar
  • 3/4 cup chicken broth
  • 2 Tbsp molasses
  • 2 tsp dry mustard
  • 1-1/2 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 1/4 tsp garlic powder

Method

Preheat oven to 350. In dutch oven, cook the bacon over medium heat until the fat is rendered, if using precooked just refer to above instructions. Remove bacon to paper towl and set aside. Add onion and bay leaf to pan and cook until onions are translucent, about 10 minutes. Reduce heat to low and add bacon and remaining ingredients. Stir until well combined. Cover and bake for 40 minutes. Stir before serving.

I used my pampered chef dutch oven that can’t be used on top of the stove so I just did the bacon and onions in the egg skillet and had all the other ingredients in my stoneware and added the onions and bacon when done and threw it all in the oven to bake.
