Karate ambade ghashi ( konkani mixed vegetable curry) sweet and spicy

Description

This is my m-in-laws age old recipe, substituted raw mango for ambade. A typical konkani dish

Ingredients

  • Vegetables needed for this dish are,
  • Karela(bitter melon): 4-5
  • turiya(ridge gourd),: 1 large
  • bhindi(okra) 2-4
  • ,alsando(long chinese beans): a small bunch
  • 1 raw sliced green mango.,
  • seasoning : Oil,mustard seeds, curry leaves
  • Masala for curry
  • Grated coconut 1 cup
  • 1/2 tsp udid dal, coriander, 4-5 red whole chillies,methi seeds , tamarind paste 1/2 tsp

Method

Cut the vegetable into big pieces(circles for Karela, and turiya)slices for mango and beans broken into 2 inch ,Cook this in very little water until all water is evaporated, with salt and jaggery(brown sugar) Masala: Roast all the seeds and add to the coconut along with tamarind. Grind it till smooth and let the vegetables cook a little more in it, till it comes to a boil. Add seasoning before serving, Oil, mustard seeds and currypatta. This is a very yummy curry
