3 Meat Chili

Ingredients

  • 3 tblsp Oil from suet or bacon drippings
  • 3 lbs Lean ground beef (or ground turkey)
  • 2 lbs Steak, extra lean, cubed (Round, flank, blade, or shoulder)
  • 1 lb Pork shoulder, extra lean, cubed or coarse ground
  • 1 lb Linguica or andouille sausage, finely chopped
  • 3 Purple onions, large, chopped small
  • 3 Sweet Onions, chopped small (1 additional for garnish, optional)
  • 6 Garlic Cloves, finely minced
  • 2 cup Green Chiles, chopped (canned/bottled is OK)
  • 2 Green Bell Peppers, chopped small
  • 2 Red Bell Peppers, chopped small
  • 2 Celery stalks, minced
  • 1/4 cup Parsely, minced (optional)
  • 8 tblsp Chili Powder
  • 2 tblsp Cumin, ground
  • 2 tblsp Spanish sweet paprika
  • 2 tblsp Oregano, dried (Greek, if available)
  • 4 Red Peppers, dried (2 tblsp if crushed)
  • 4 Jalapeño Peppers, sliced (optional)
  • 2 tsp Black Pepper
  • 1 tsp MSG
  • 2 tsb Salt
  • 1 tsp Coriander (crushed or ground)
  • 2 tblsp Maggi Seasoning
  • 1/4 cup Tiger Sauce
  • 16 oz Beef Broth
  • 30 oz Tomato Sauce
  • 12 oz Tomato Paste
  • 1 cup Plum tomatoes, diced
  • 2 tblsp Corn Flour (masa harina; all-purpose flour is OK instead)
  • 1 lb Kidney Beans (optional)
  • 1 Beer (Preferably a hoppy variety)
  • Cheese, shredded (optional)

Method

Wash beans and soak overnight in plenty of salted water.

Reserve parsley, jalapeños, cheese, and 1 sweet onion for garnish.

Combine and saute sween onions, garlic, bell peppers, and celery in 2 tblsp oil until the onions are clear, then set aside.

Combine the ground meats. Use remaining oil to saute on high heat until brown. Drain. Set aside.

Saute the cubed meats, drain.

Add all meats to large pot along with spices. Mix in remaining liquids except beer. Min in remaining vegetables and dry items except reserved garnish, beans, beer, and flour.

Bring to a simmer, taking care not to overheat the bottom. Continue simmer, covered, on low heat for 3 hours. Adjust consistency by removing cover, adding flour, or adding beer as desired. Add spice to taste as necessary. Dispose of remaining beer properly.

Boil beans in plenty of fresh water for 2-3 hours, until tender.

Simmer main chili pot for an additional 2 hours, for a total of 5 hours.

Combine beans, or serve on the side.

Serve garnished with onion, parsley, chees, and jalapeño slices.
