Jaffa orange cheesecake

Description

Rich and creamy cheese cake which easy to make and very tasty, the downside is it has about a billion calories. I took this recipe from a bbc webstite

Ingredients

  • BASE
  • 300g jaffa cakes(chopped)
  • 100g digestives(crushed)
  • 100g butter(melted)
  • CHEESECAKE FILLING
  • 500g Mascarpone
  • 50g caster sugar
  • 350ml whipping cream (whipped)
  • 350g white chocolate(melted)
  • TOPPING
  • 75g caster sugar
  • 375ml whipping cream
  • 175g orange flavoured chocolate
  • 75g butter

Method

BASE 1.Combine the jaffa cakes and the digestives together and stir in the butter. 2. Press the mixture into 10 mousse rings placed on a tray covered with cling film. ( i could not be arsed with that so i got two 8 inch flan dishes and that was enough). CHEESECAKE FILLING 1.Gentley mix the mascarpone and sugar together. 2.Fold in the whipped cream then quickly fold in the melted white chocolate. 3.Fill each ring or dish and smooth out just under rim or a little less than that. 4.Chill in the fridge while you make the topping. TOPPING 1.Heat the sugar and the cream in a pan on a low
heat until the sugar has dissloved. 2.Bring to the boil and simmer for 8 minutes or until pale yellow in colour. 3.Stir in chocolate and butter until melted then allow to cool slighty.(Try and use terrys or other orange chocolate. I tried to cheat by using plain belgian chocolate and adding orange juice, almost got it right but it easier to use ready made. Also when it says cool slighty let it cool for about 7-8
mins otherwise it will cause some of the filling to
mix in with the topping). 4.Top each cheesecake. 5.Leave to set in the fridge for about 2 hours. NOTES Decorate with orange segments and/or mint. This stuff keeps for about 3 days as i gave the last piece tp someone after 3 days and they were fine LOL
