Hearty Slow Cooker Pot Roast with Root Vegetables and Gravy

Description

Enjoy a comforting and hearty meal with this easy slow cooker pot roast recipe. Featuring tender bottom round roast, potatoes, carrots, and onions, all simmered in a savory beef broth. Perfect for a family dinner, this crock pot beef roast is effortlessly prepared and pairs wonderfully with rich gravy or a zesty horseradish sauce.

Ingredients

  • 3-4 lb. bottom round roast
  • 4-6 red bliss potatoes; cut in quarters or eighths
  • 1 onion; sliced
  • baby carrots
  • 2 cups beef broth or boullion
  • seasonings: garlic powder, basil, bay leaf, oregano, salt, pepper

Method

Coat the roast in seasonings. Place it in bottom of large crock pot. Place vegetables and bay leaf around the beef. Pour the stock in, making sure not to pour over seasonings on beef. The stock should come to about 1/3 up the roast.

Cook on low for 8-10 hours, give or take.

Serve with beef gravy and/or horseradish sauce.

Horseradish sauce: 1/2 cup each of miracle whip or mayo and sour cream, 1 rounded tablespoon of prepared horseradish, 2 tsp dijon mustard, salt and pepper. Combine.
