Preparation time: 20 min Cooking time: 20 min Easy - for beginners Serves: 5-6 servings

Description

I love the Green Chili Chicken Soup at Chili's! I modified a recipe for it from the Picky Palate blog - most of it is the same - but I subbed a few things. YUMMO!

Ingredients

  • 1 tbsp extra virgin olive oil
  • 1/2 onion, chopped
  • 2 cloves fresh or roasted garlic
  • 5 cups chicken broth
  • 1 medium tomato, diced
  • 2 bunches cilantro, chopped
  • 7 oz can diced green chilies
  • 2 medium boneless skinless chicken breasts; cooked, shredded and lightly seasoned with salt and pepper
  • 1 1/2 Cups cooked brown rice
  • 1/8 Cup fresh lime juice
  • 1 1/2 teaspoons ground cumin
  • Pinches of Kosher salt, fresh cracked black pepper and garlic powder to taste
  • Fresh diced avocados, drizzled with lime juice

Method

  1. Place oil into a large dutch oven over medium heat. Saute onion for 5 minutes then add in garlic; cook for 1 minute. Stir in chicken broth, tomatoes, 1/2 of the cilantro, green chilies, chicken breast, rice, lime juice and seasonings. Cook for 5 minutes; taste and season according to your liking.

  2. Garnish bowls of soup with fresh diced avocado and cilantro.
