Granny’s Matilda Cake

Description

Almost like a fruity shortbread, or an über-thick cookie

Ingredients

  • 6oz Butter
  • 2 Tbsp Golden Syrup
  • 4oz Sugar
  • 4oz Sultana’s
  • 4oz Glace Cherries (chopped)
  • 10oz SR Flour

Method

  • Melt the butter, syrup & sugar

  • Add fruit

  • Fold in the flour

  • Spread out in a lined square or swiss-roll tin

  • Bake @ 160C for 20-30mins
