Fredericton Walnut Toffee

Description

This brittle toffee recipe was brought to New Brunswick, Canada by English settlers and has become a Christmas Day favorite in the area. Recipe was traced to a 1735 cook book printed in London, England.

Ingredients

  • 1/2 Cup Walnut Pieces
  • 1-1/3 Cups of Lightly Packed Brown Sugar and
  • 1 Cup of Butter
  • 3 Squares of Grated Semi-Sweet Chocolate

Method

Butter a 9-inch square pan thoroughly.

Spread in pan 1/2 Cup Walnut Pieces

Mix together in heavy frying pan 1-1/3 Cups of Lightly Packed Brown Sugar and 1 Cup of Butter

Cook over medium heat (keep mixture bubbling), stirring constantly, for 12 minutes.

Pour toffee mixture quickly over nuts.

Sprinkle over hot toffee,

           3 Squares of Grated Semi-Sweet Chocolate 

As chocolate melts, spread until smooth.

Sprinkle with chopped nuts.

Chill, and break into pieces.
