Easy Seafood Paella Recipe from Cascal Restaurant

Ingredients

  • 1 cup rice (specialty paella rice or short grain)
  • 2 oz olive oil
  • 2 tb sofrito
  • 2 lb seafood
  • 2 cups shrimp stock (or chicken stock)
  • 1 tsp saffron
  • 1/4 cup piquillo peppers
  • 1/4 cup peas
  • 1/4 cup green beans
  • 1 tb aioli

Method

Saute rice on medium heat in skillet for about 8 minutes. Add the sofrito. Add stock and seafood and cook for 10 - 12 minutes. Mix in saffron, piquillo peppers and green beans. Add a little more stock if paella needs moisture. Bake uncovered in 350 degree oven for about 15 minutes. Remove and garnish with aioli, salt, and pepper.
