Easy Provençale Zucchini with Cherry Tomatoes and Fresh Herbs

Description

Elevate your vegetable side dish with this easy and flavorful Provençale zucchini recipe. Sautéed with sweet cherry tomatoes, aromatic rosemary, and fresh basil, it's a simple yet delicious way to enjoy courgettes. Perfect as a vibrant side for roast beef or any main course.

Ingredients

  • 4 large courgettes (zucchini)
  • Olive oil for cooking
  • 1 rosemary sprig
  • Pinch of salt and pepper
  • 2 tbsp balsamic vinegar
  • ½ pkg cherry tomatoes, halved
  • 3-4 basil sprigs, leaves torn

Method

Cut the courgettes on the diagonal into 1cm thick slices. Heat a little olive oil in a large sauté pan. Add the courgettes with the chopped rosemary and sauté for a couple of minutes, seasoning well and adding a dash of balsamic vinegar. Tip in the cherry tomatoes, adding a little more olive oil, seasoning and vinegar. Cook for about 1 minute until the courgettes and tomatoes have just begun to soften. Toss in the basil leaves, check the seasoning and serve immediately.
