Tender grouper fillets are perfectly baked with a flavorful topping of sautéed spinach, roasted garlic, and a generous blend of mozzarella and Parmesan cheeses, creating a delightful and comforting seafood main course suitable for beginners.

Ingredients

  • 2 Pound Grouper filets
  • 2 Pound fresh spinach
  • 3 Tablespoon olive oil
  • 3 Bulbs roasted garlic
  • 1 1/2 Pounds shredded mozzarella cheese
  • 4 Ounce Parmesan cheese (grated)
  • Bayou Dust Cajun Seasoning

Method

Instructions: Preheat oven to 350 degrees. Cut Grouper into five 6-8 ounce pieces. Sprinkle with Bayou Dust seasoning and set aside. Chop spinach and sauté in 2 tablespoons of olive oil. Add roasted garlic and cook until soft. Coat baking pan with 1 tablespoon olive oil. Cover each filet with spinach-garlic mixture. (approximately 3 tablespoons) Sprinkle each filet with a pinch of Parmesan cheese then top with 4-5 ounces of mozzarella. Bake for 10-15 minutes or until fish flakes.
