Curried Green Tomato Soup

Description

I just learned about this soup at a vegatarian cooking demo this week. It's awesome! What a great way to use up your green tomatoes!

Ingredients

  • Green Tomato Sauce Ingredients
  • 1 lb green tomatoes, chopped in large pieces
  • 1/2 cup extra virgin olive oil
  • 2 large garlic cloves
  • 1/4 t hot red pepper flakes
  • salt and pepper to taste
  • Curried Green Tomato Soup Ingredients
  • 2 T grapeseed oil
  • 2 large carrots, peeled and medium diced
  • 1/2 yellow onion
  • 2 stalks celery, diced
  • 1 quart green tomato sauce
  • 1 to 2 cups vegetable stock, depending on desired thickness
  • 1 T red curry paste, diluted in 1 T water
  • salt and pepper to taste
  • whole milk yogurt for garnish

Method

Directions for Green Tomato Sauce

Combine all ingredients in a stock pot and cook down until tomatoes are soft (about 30 to 45 mins). Transfer to a belnder and blend until smooth. This will be a very smooth and silky sauce that is good over pasta, over lasagna, or turned into a soup. It freezes well.

Curried Green Tomato Soup Directions

Heat oil in a small hot stockpot. Saute carrots, onions, and celery until slightly soft, about 5 min. Add green tomato sauce and 1 cup vegetable stock and cook until vegetables are completly soft, about 10 mins. Puree in a blender or food processor. Add additional stock if desired. Add the curry paste and salt and pepper to taste. Serve with yogurt garnish.
