Ingredients

  • 1 lb. fresh okra
  • 2 Tbsp. flour
  • 2 egg whites
  • 1-1/2 c. soft breadcrumbs
  • Vegetable oil
  • Salt

Method

Wash okra and drain well. Remove tips and stem ends. Cut okra into ½-inch slices. Place okra and flour into a zip-top bag. Seal bag and shake until okra is coated. Beat egg whites at high speed until stiff peaks form. Fold in okra. Stir in breadcrumbs, coating well. Pour oil to a depth of 2 inches. Heat to 375. Fry okra and drain. Sprinkle with salt.
