Easy - for beginners

This is one of our favorites! It goes great with just about anything.
In a large bowl, stir together the two cans of corn, corn muffin mix, sour cream, egg and butter. Pour into a greased casserole. Bake at 350 degrees for 40 to 45 minutes, or until golden brown. Top with cheddar cheese and return to oven for another 5 minutes until cheese is melted.
*this recipe is very rich. I have gotten away with using 1/4 cup to 1/3 cup of margarine instead of the whole stick and had very similar results.
