Cora’s Jumbo Raisin Cookies

A recipe found years ago in the paper, made often to appease the desires of my dad, his all-time very favorite cookie. This is a soft, melt-away, moist cookie loaded with succulent raisins and bursting with flavor! A delightful indulgence!!

Ingredients

  • 2 cup Raisins
  • 1 cup Water
  • – place raisins and water together into a pan; br
  • 3 1/2 cup All purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 1 teaspoon Salt
  • 1 cup Shortening
  • 1 3/4 cup Sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla
  • 1/2 cup chopped nuts –optional–

Method

*make sure all ingredients are at room temperature.

Mix dry ingredients together. Cream shortening together with sugar, eggs, and vanilla. Add dry ingredients and mix thoroughly together. Add raisins and water, mix by hand until completely incorporated.

Place rounded teaspoonfuls on cookie sheets and bake at 350° 12-15 minutes or until light brown. Allow to cool on racks before eating.
