Cod Florentine

Description

I got this Flounder Florentine recipe out of the Taste of Home's Casseroles, slow cooker & soups cookbook. I used Cod in this dish and it was one of the best fish dinners I've ever had.

Ingredients

  • 1 Pkg (10-oz) of frozen spinach, thawed, drained, and chopped,
  • .5 Lb. Cod or Flounder (You Choose)
  • 1.5 Tbsp chopped onion
  • 1 Tbsp of butter
  • 1.5 Tbsp of All purpose flour
  • 1/8 tsp. salt
  • 1/8 tsp. pepper
  • 1/8 or less of tsp. ground nutmeg
  • 3/4 cup of milk
  • 1/2 Tbsp or more of Parmesan cheese
  • 1/8 tsp. of paprika (Optional)

Method

Sprinkle spinach in a 13 X 9 in baking dish coated with nonstick cooking spray. Top with fillets.

In a large saucepan, saute onion in butter until tender. Stir in the flour, salt, pepper and nutmeg until smooth. Gradually add milk. Bring to boil; cook and stir for 2 mins or until thickened.

Pour over fillets; sprinkle with cheese and paprika (optional)

Bake, uncovered, at 350 for 20 mins or until fish flakes easily with a fork.
