Description
My sister's recipe. Very quick and easy to make. Delicious with a side salad.
Ingredients
- 1 pack sliced chorizo (I use tesco brand)
- 1 tub goats cheese (I use tesco french goats cheese)
- 2 cloves garlic chopped
- 1 onion chopped
- handful of mushrooms chopped (optional)
- 1 jar passata (I use roma passata)
- 250g penne/fussili pasta
- 1 tablespoon olive oil
- salt + pepper to taste
Method
- Cook the pasta
- In a frying pan, fry onion and garlic in olive oil until soft
- Chop up the chorizo into strips, and add to frying pan with chopped mushrooms, fry until mushrooms are cooked
- Add the jar of passata and mix well
add salt and pepper to the sauce to taste (not too much salt as the chorizo is already quite salty)
- In a large oven dish, throw in the cooked pasta, cover with the passata sauce, then crumble in half the goats cheese
- Mix a little (but don’t mix so much that the goats cheese ‘dissolves’ it should remain in chunks)
- Add rest of goats cheese to top (it will brown nicely in the oven)
- Oven bake for 20 mins at about 180 degrees celcius
