Chocolate Marshmallow Chubbies

Description

Easy, easy, easy and soooo chocolately, these chocolate cookies are topped off with flair! A gooey, warm marshmallow is just the most PERFECT pairing with this rich, chocolate cookie. You, your family and your friends will LOVE these cookies!

Ingredients

  • Cookie
  • 1/2 C. Butter or Margarine
  • 1 C. Sugar
  • 1 Egg
  • 1/4 C. Milk
  • 1 tsp Vanilla
  • 1/3 C. Cocoa (I like to add a bit more :)
  • 1-3/4 C. Flour
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 18 Marshmallows, large sized, cut in half
  • Frosting (optional)
  • 6 T Butter or Margarine
  • 2 T Cocoa
  • 1/4 C. Milk
  • 1-3/4 C. Powdered Sugar
  • 1/2 tsp Vanilla
  • Pecans, halved

Method

Cookie

  1. Cream together butter and sugar.
  2. Beat in egg, milk and vanilla.
  3. Add dry ingredients and mix well.
  4. Drop by teaspoons full on ungreased cookie sheet.
  5. Bake at 350 F for 8 minutes.
  6. Remove from oven and top each cookie with a marshmallow half.
  7. Bake 2 more minutes.
  8. Remove and cool slightly.

Frosting (optional; I don’t even use this but it would add even more flair)

  1. Boil butter, cocoa and milk together for 1 minute.
  2. Cool slightly; add sugar and vanilla; beat well.
  3. Drizzle 1 T over each cookie and top with a pecan half.
