Grand Cayman has no freshwater fish and Tilapia is a freshwater fish so the recipe name is a bit naughty. However, the method of preparation is taken from the traditional Caymanian method of preparing any fish.
1.) Heat the olive oil in a frying pan and stir fry the onions and green pepper until slightly softened. Remove and wipe clean but do not wash the pan. 2.) Wash the tilapia with the lime juice and season with salt/fish seasoning and pepper 3.) Heat the coconut oil in the frying pan on a low heat 4.) Add the tilapia, turning once immediately to coat the fillets in the oil 5.) Add the half-cooked onion and sweet pepper to the pan and then cover 6.) Cook for 10-15 mins until cooked through
I served the fillets on a bed of white rice accompanied by plantained par-boiled and then fried in a little butter with cinnamon.
