Spread for Crackers, Bread or veggies
Ingredients
- 1 package tofu - firm or less firm
- 1/4 c nutritional yeast
- vegan mayo to taste
- 1/2 c raw cashews, chopped
- 1/2 head parsley
- 2 celery stalks
- 1/2 onion
- 1/2 roast red pepper - you can buy this but its easy to roast on the grill or broiler- skinned
- 1/4 c white raw or roasted sesame seeds
- tamari to taste
- dijon mustard to taste
- garlic
Method
mash tofu in a bowl
mince veggies
chop cashews
add all ingredients above
add mayo, mustard, yeast, spices
mix and refrigerate
will be dense, cashews soften up after refrigeration for a day
