Carla Baron’s Festive Crab & Farfalle Bowtie Pasta with Sun-Dried Tomatoes & Broccoli

Description

This festive and easy-to-make pasta dish, perfect for Christmas or any special occasion, features Farfalle bowtie pasta, tender crab meat, vibrant broccoli florets, and savory sun-dried tomatoes, all brought together in a delicious, colorful sauce.

Ingredients

  • Farfalle pasta (bows) cooked al dente
  • crab meat (Trader Joe’s is what I used w/ 15% leg meat)
  • broccoli florets
  • small can sliced black olives
  • 3 cloves garlic, crushed
  • 6 julienne sliced sun-dried tomatoes in olive oil (Trader Joe’s)
  • 2 tsp. crushed red pepper
  • fresh basil, parsley to taste
  • extra virgin olive oil, 2 tbsp butter
  • 1/3 c. cream cheese
  • freshly shaved parmesan
  • splash of white chablis

Method

Cook pasta al dente, adding broccoli florets during last 5 minutes to boiling pasta. Drain, reserving 1/2 c. pasta water.

Lightly saute garlic in butter, and chopped sun-dried tomatoes for about 1 min. Add chablis, reduce for 1 min. Fold in other ingredients except pasta + broccoli, adding pasta water to desired sauce consistency and cream cheese has slightly melted smooth. Sprinkle w/ freshly shaved parmesan. Serve room temperature, or even cold as a nice pasta salad.

P.S. Next time I make the Calypso Bows.. gonna serve w/ an oven-roasted slice or 2 of banana squash, sprinkled with just a hint of nutmeg and brown sugar.
