BBQ chicken wings (or in the oven)

Preparation time: 5 Cooking time: 40mins to 1 hr Serves: 4 (or more if you double, tripple the recipe)

Description

Hot or cold, to cook on the BBQ or in the oven (recipe for oven). Drumsticks can be used but take 1hr to cook. A great slack dinner when you can't be bothered!

Ingredients

  • 1 tablespoon vegetable oil
  • 1 tablespoon honey or hoisin sauce
  • 2 tablespoons light or dark soy sauce
  • 1 teaspoon sambal oelek or chilli sauce (I use minced chilli, bit easier)
  • 1 tablespoon tomato paste or tomato sauce
  • 2 cloves of garlic, smashed or roughly chopped (I crush in garlic crusher)
  • freshly chopped ginger (I grate about 2cm of ginger, peeled first)
  • 1/2 cup chicken stock or water
  • 12 chicken wings or 20 drumettes (sometimes 1 do 3kg of wings and tripple the recipe - often about 15-18 drumsticks is ok with the ingredients)

Method

Preheat oven to 200 degrees celcius Select a baking dish into which the wings will fit easily Add oil and seasonings including stock (often I don’t think the stock is necessary as it can make it too juicy) Toss wings to coat (often I will put the wings in the tupperware season serve and let it marinade for 1/2hr or more - great if you have to go out and need to come home and have dinner prepared) Bake for 30mins until tender, shaking dish from time to time Increase heat to evaporate liquid and so the wings become dark and shiny. This may take only 10mins, so keep a close watch on them

I like to serve this with yummy bread rolls. Daren and I just pull the meat off the bone and wack them into the bread rolls. The chicken is so nice and juicy. Be aware of how much chilli you use, as toddlers and young children will find it too hot.
