Authentic Indonesian Samba Fried Chicken with Coconut Milk

Description

Discover this authentic Indonesian Samba Fried Chicken recipe, a traditional West Sumatranese dish. Chicken thighs are first tenderized by boiling in a rich marinate sauce infused with aromatic spices like ginger, galanga, onion, and garlic, along with creamy coconut milk. Finally, the chicken is fried to a delicious golden-brown crisp. Perfect served with steamed rice and a spicy chili sauce for a flavorful and satisfying meal.

Ingredients

  • 6 chicken thighs
  • 200 ml coconut milk
  • 4 lime leaves
  • Marinate:
  • 1 onion
  • 4 cloves garlic
  • 1 cm ginger
  • 1 cm galanga or Siamese ginger (I used 2 tbsp galanga powder)
  • Salt to taste

Method

Blend all marinate ingredients then sauté for awhile

Combine coconut milk, sautéed marinate mixture, lime leaves and chicken. Boil using a small flame until the marinate becomes less. Let stand in the rest of marinate shortly

Heat the oil then fry chicken until gold brown. Serve immediately
