- 250g butter
- 375g box dry fruit mix
- 1 cup sugar
- 75g orange peel
- 1 cup water
- 50g snipped cherries
- ½ tsp soda bicarbonate
- Ingredient B
- 3 large eggs
- ½ tsp vanilla essence
- Ingredient C
- 250g flour
- ½ tsp baking powder
- Ingredient D
- 1tsp mixed spice
- 1tsp cinnamon
- 1tsp ground ginger
- Note: Dish to be 7 round and lightly grease the dish, put wax/tracing paper in the bottom of the dish.
Method
Ingredient A
- Cook butter in pot till melt on small fire.
- Add in water, sugar, dry fruit mix, orange peel, cherries and soda bicarbonate. Stir it till the colour turn brown.
- Let the mixture cold at the room temperature. Do not put it in the fridge.
Ingredient B
- Whisk flour and baking powder together.
Ingredient C
- Beaten the eggs and vanilla essence together.
Step-by-step:
- Now you already have three (3) portions of mixture. Mix it 1/3 of portion part by part and stir it and repeat it till complete. Once complete, to add in Ingredient D “ mixed spice, cinnamon and ground ginger and stir.
- Pre-heat the microwave for 3-4 minutes.
- Pour in the mixture into the dish and microwave 8-10 minutes on medium high (70%)
Note: Adjustment on the microwave is depending on the brand and model used. For this cake, I am using Sharp Microwave Oven R-397J(S) with 1100w.
