Cheesy Scalloped Potatoes

Description

um... cheesy scalloped potatoes. kind of a heart attack.

Ingredients

  • 1/2 cup chopped onion (1 medium)
  • 1 clove garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1/4 tablespoon black pepper
  • 1/2 teaspoon salt
  • 1 1/4 cups heavy cream
  • at least 2 cups shredded cheddar (or your favorite cheese)
  • 1 pound new potatoes
  • 1/2 cup breadcrumbs

Method

  1. preheat oven to 350F
  2. grease an 8" square pan; set aside
  3. in a small saucepan, cook onion and garlic in butter until tender/clear
  4. stir in flour, salt, and pepper
  5. add cream all at once
  6. cook and stir over medium heat until thickened and bubbly, then add shredded cheese
  7. thinly slice potatoes
  8. layer in greased dish with cheesy sauce, starting with potatoes and ending with sauce.
  9. sprinkle breadcrumbs on top
  10. cover dish with aluminum foil and bake for 40 minutes
  11. uncover and bake for 15-20 more minutes or until potatoes are tender and top begins to slightly brown
