Description
um... cheesy scalloped potatoes. kind of a heart attack.
Ingredients
- 1/2 cup chopped onion (1 medium)
- 1 clove garlic, minced
- 2 tablespoons butter
- 2 tablespoons flour
- 1/4 tablespoon black pepper
- 1/2 teaspoon salt
- 1 1/4 cups heavy cream
- at least 2 cups shredded cheddar (or your favorite cheese)
- 1 pound new potatoes
- 1/2 cup breadcrumbs
Method
- preheat oven to 350F
- grease an 8" square pan; set aside
- in a small saucepan, cook onion and garlic in butter until tender/clear
- stir in flour, salt, and pepper
- add cream all at once
- cook and stir over medium heat until thickened and bubbly, then add shredded cheese
- thinly slice potatoes
- layer in greased dish with cheesy sauce, starting with potatoes and ending with sauce.
- sprinkle breadcrumbs on top
- cover dish with aluminum foil and bake for 40 minutes
- uncover and bake for 15-20 more minutes or until potatoes are tender and top begins to slightly brown
