Bistro 110 French Onion Soup

Ingredients

  • 1 Tbl unsalted Butter
  • 1 1/2 tsp olive oil
  • 1/2 pound onions, thinly sliced
  • 1/4 pound leeks, white part only, thinly sliced
  • 1 garlic clove, finely chopped
  • 1/4 tsp sugar
  • 1 1/2 Tbl all purpose flour
  • 4 Cups beef stock or canned broth, heated
  • 1/4 Cup dry vermouth
  • Dash hot pepper sauce
  • Freshly ground pepper
  • Salt to taste

Method

Melt butter with oil in a heavy large pot, over low heat.
Add onions, leeks, and garlic. Cook until onions soften, stirring occasionally, about 15 minutes. Increase heat to medium-low and add sugar. Cook until onions are deep golden brown, stirring frequently. Add flour and stir 3 minutes.
Add stock, vermouth, hot pepper sauce and pepper. Simmer 40 minutes.

Traditionally served with a toasted round of good bread (French or Italian) and a slice of cheese on top. (Provolone or your choice) Then put under a broiler until the cheese is melted.
